  • 4 cucumbers sliced thinly lengthwise
  • 8 ounces cream cheese, room temperature
  • ½ cup chopped sun-dried tomatoes
  • ¼ cup chopped fresh basil leaves
  • 1 tablespoon chopped fresh chives
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


  1. Arrange cucumber slices on paper towels. Top with another layer of paper towels. Set aside.
  2. Beat the remaining ingredients together until well combined.
  3. Press the top layer of paper towels to absorb as much liquid from the cucumbers as possible.
  4. Spread the cream cheese mixture over a slice of a cucumber and roll up to form a pinwheel.
